...but we're really loving rice dishes lately.
This is our newest favorite recipe. It's quick, easy, and budget conscious!
STIR-FRIED PORK WITH CHILI AND SCRAMBLED EGG
Ingredients:
1 onion, chopped
1 tbsp finally chopped garlic
4 oz. pork, cut into small cubes
2 eggs, beaten
4 scallions, finely sliced, to garnish
2 fresh red chilies, sliced, to garnish
1 lime, cut into wedges, to garnish
2 1/2 cups long grain rice
3 tbsp veg. oil
2 tbsp Thai fish sauce
1 tbsp dark soy sauce
1/2 tsp {superfine} sugar
Directions:
1. Cook the rice according to the instructions on the packet. Spread out and leave to cool.
2. Heat the oil in a wok or large frying pan. Add the onion and garlic and cook for about 2 minutes, until softened.
3. Add the pork to the softened onion and garlic. Stir-fry until the pork changes color and is cooked.
4. Add the eggs and cook until scrambled into small lumps. Add the rice and continue to stir and toss, to coat it with the oil and prevent it from sticking.
5. Stir in the fish sauce, soy sauce, and sugar; mix well. Continue to fry until the rice is thoroughly heated.
6. Spoon into warmed individual bowls and serve; garnish with scallions, chilies, and lime wedges.

So today, after watching my tennis lover Roger Federer win his 15th grand slam, I saw that we both married in April 2009! and ironically, our original date was the same date as his, April 11.
And! his opponent, the serving speed-demon Andy Roddick, was also wed in April 2009!
And...for the heck of it, I wiki'd April 4th. It gives you a list of all the events and births that occurred on that day. It's REALLY interesting.
Just a few fun events that share our wedding date:

-In 1850, Los Angeles, California is incorporated as a city.

With the leftover wrapping paper I used for my envelope liners, I lined some dresser draws! I'm loving the polka dots.
I made these for some summertime sweetness. They were quite yum!
Peachy Popsicles: I threw together some simple syrup (1 part water:1 part sugar) and fresh peaches peeled and cut into a blender. Then poured it into the molds. They turned out being a little soft...not your typical hard icy popsicle. I think next time I'm going to try and make them a little harder.
This weekend I tried my hands at making these magazine coasters. They turned out pretty good! so much better than the bar coasters I had...
