sunday cupcakes: week 1

I'm going to try my hardest to make cupcakes once a week to take into work. Essentially we're creating a cupcake club! and this gives me the opportunity to try various cupcake recipes and to improve my technique.

First up, Hershey Bar Cupcakes!

Cake
2 c. sugar
1 c. vegetable oil
2 eggs
2 c. plain flour
1/2 tsp. salt
1 tsp. soda
1/4 c. cocoa
1/2 c. buttermilk
1 c. water
1 tsp. vanilla

Mix all ingredients and pour into lined cupcake pans. Bake at 350 degrees for 17-20 minutes or until toothpick comes out clean. Let cool completely.

Icing
1 (8 oz.) pkg. cream cheese, softened
1 c. powdered sugar
1/2 c. granulated sugar
1 (12 oz.) container Cool Whip
2 Hershey Bars, grated

Mix the first three ingredients well. Then fold in cool whip and chocolate shaving last. Spread onto cupcakes. Keep refrigerated.
